Do you have olives cured in caustic soda?
Indeed, the Mountain Olive, the Chupadedos (Yeyé) Olive, and the Black Pearl Olive are cured in caustic soda. Due to their curing in caustic soda, these three olive varieties have the least amount of salt, making them a good option for hypertensive people who still want to enjoy the consumption of olives.
How to preserve the olives and prevent them from getting soft?
Olives should be stored in a cool and dry place, and the container should be tightly closed. Also, it is worth mentioning that old olives should not be mixed with new ones because old olives could oxidize new ones. Finally, olives that are stored in jars should be covered by the preserving liquid in the container. If this is not the case, you can add water and salt until you can completely cover them.
