The Aubergine-Flavoured Olives are one of our gastronomic wonders. In this case, The Pitless Gordal Olive has been seasoned in the broth that the aubergines give off. In Aceitunas El Cortijo we wanted to adapt the traditional recipe and print our seal of identity. That’s why aside from dressing them in De la Vera red pepper, laurel and cumin, we have added a pinch of spice. Not only have we kept that characteristic aubergine flavour, but we have also widened this product’s acceptance to another audience.

Proceeding from the Andalusian fields, the Anchovy-Flavoured Pitless Gordal Olive is the olive with the most calibre that you can find in the Spanish territory. Green and slightly golden in appearance, its texture is hard, so its variety produces very little oil. Concretely, the Anchovy-Flavoured Pitless Gordal Olive is ideal to be marinated with any type of sauce and it is one of the most valued olives for our younger audience, due to its plumpness.
